Champagne Chavost
🌿 Origins and History
Foundation in 1946: Born from the collective will of about twenty winegrowers from the village of Chavot-Courcourt, the estate carries the ancestral name of the village “Chavost”.
Recent Transformation: In 2019, oenologist Fabian Daviaux took over the management and brought a new dynamic. After ten years of international experience, he returned with the ambition to produce champagnes with strong identity and natural character.
🍇 Vineyard and Practices
Surface Area: Around 5 to 5.5 hectares of vines.
Organic Conversion: Since the 2023 harvest, the vineyard has been certified organic, with careful work respecting biodiversity.
Philosophy: Vinification with as few inputs as possible, often none, and without added sulfites, giving the wines a singular identity and aromatic purity.
